Hello! Please first start by making a space on the shelf for your Mom of the Year Award. Every kid likes pop tarts and the possibility for these ones are endless. Have you ever looked at what's in pop tarts? They're crap and their crust tastes like cardboard. As with most things, homemade is so much better. Let's start with the ingredients.
Semi - Homemade Pop Tarts:
2 rolls pre-made pie crust (or homemade! check out my recipe soon!)
1 cup Strawberry Jam (or any other flavor) + 1-2 T. for the glaze
1 cup Powdered Sugar
1 egg
1/2 tsp. Vanilla
2-3 T. Milk
Sprinkles
That's it! You are on your way to being the coolest Mom ever. Let's get started.

Directions:
1. Pre-heat your oven to 400 degrees.
2. Unroll pie crusts on a parchment lined baking sheet. I used a pizza cutter to cut out the rectangles. You will need one for the bottom and one for the top of each Tart. You could use an index card to make sure they are all uniform. Another option would be to use large cookie cutters and make shaped Pop Tarts. Once you have used as much of the rolled crust as you can. Form the scraps into a ball and re-roll out the crust to use up the rest.

3. Add about 1 tablespoon of jam to half of the rectangles. Leave a little space around the edges for crimping. Dip your finger in a little water and wet the edges to top crust edges stick together with the bottom.
4. Place the top crust on and pinch the edges all the way around so that the filling doesn't run out. Afterwards, use a fork to crimp the edges. Prick the tops about 4 times to let the steam out while baking.

5. Brush the tops of the Tarts with the egg so that they get a nice golden finish in the oven.
6. Bake 12-15 minutes or until golden. Let cool.
7. Whisk together Powdered sugar, vanilla, 1-2 T. jam, and milk. The jam will naturally color the glaze, but you are welcome to add a few drops of food coloring as well. Spread over each Pop-Tart and top with sprinkles!

These will keep at room temperature for a few days*
